Cinnamon mugcake with banana yoghurt

Ingredients:

1/4 cup (80g) oats
1 egg
1 banana
50ml rice milk (you can also use almond or soy)
little bit of stevia and cinnamon


Directions:

put all the ingredients in a mug
mix everything with a spoon
microwave it for 1min or a bit longer
flip it upside down, top it with a yoghurt or sauce of your choice and
ENJOY!!!

Stuffed butternut Squash

Ingredients:
1/2 butternut Squash
3 mini tomatoes
1/4 red bell pepper
2tbsp. corn
2 tbsp. tuna

Directions:
spray butternut squash with EVOO and bake for 20min/250°C (or until it's soft)
chop bell pepper and tomatoes into little pieces
fry bell pepper, corn, tuna for 10min by adding EVOO and salt+pepper
add tomatoes and fry them for 1min
sprinkle with herbs and that's it

Banana-berry pancakes with berry topping

Ingredients (pancakes):
1/3 cup (50g) oats
1 egg
1 smashed, ripe banana
1 handful of frozen berries 
1tsp. whole-grain flour
1/4 cup (50ml) milk (semi-skimmed, almond,..)
1 tsp. cinnamon

Directions (pancakes):
mix oats, egg, banana, flour, milk and cinnamon until it's a smooth batter
add berries and mix them with a spoon
spray pan with oil
fry pancakes on medium heat (1min each side)

Ingredients (topping):
1 tbsp. low fat curd cheese/quark
1 tbsp. low fat yoghurt
1 tsp. milk
1 handful of frozen berries

Directions (topping):
blend everything in a food processor until it has the texture of Yoghurt

Protein Pancakes 

Ingredients:
1 ripe banana
30g Protein powder
30g oats
40ml semi-skimmed milk
30g whole-wheat flour 

Directions:
mash banana 
mix everything together
spray pan with oil
fry pancakes on medium heat until they are brown 
top with fruits or curd cheese
